Herb-Crusted Roast Chicken
This Herb-Crusted Roast Chicken is a classic centerpiece for any holiday meal. Juicy on the inside with a herbaceous, crispy skin, it's seasoned with a blend of thyme, rosemary, and sage which permeates the meat with deep flavors.

- 1 whole chicken about 4-5 pounds
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh thyme
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh sage
- Salt and freshly ground black pepper to taste
- 1 lemon halved
- 4 cloves garlic smashed
Preheat oven to 425°F (220°C).
Pat the chicken dry and rub with olive oil.
Mix the chopped herbs, salt, and pepper, and rub the mixture all over the chicken.
Stuff the cavity with lemon halves and garlic cloves.
Roast in the preheated oven for about 1 hour and 15 minutes, or until the juices run clear.
Let rest for 10 minutes before carving.
