Herb-Crusted Roast Chicken

This Herb-Crusted Roast Chicken is a classic centerpiece for any holiday meal. Juicy on the inside with a herbaceous, crispy skin, it's seasoned with a blend of thyme, rosemary, and sage which permeates the meat with deep flavors.

Ingredients
  

  • 1 whole chicken about 4-5 pounds
  • 2 tablespoons olive oil
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh sage
  • Salt and freshly ground black pepper to taste
  • 1 lemon halved
  • 4 cloves garlic smashed

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Pat the chicken dry and rub with olive oil.
  • Mix the chopped herbs, salt, and pepper, and rub the mixture all over the chicken.
  • Stuff the cavity with lemon halves and garlic cloves.
  • Roast in the preheated oven for about 1 hour and 15 minutes, or until the juices run clear.
  • Let rest for 10 minutes before carving.
