INGREDIENTS:
- 3 ripe bananas, sliced
- 2 cups low-fat milk
- 1/2 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup Greek yogurt (for added creaminess and protein)
- 30 vanilla wafers
- 1/2 cup whipped topping or freshly whipped cream
INSTRUCTIONS
Step 1: Prepare the Vanilla Custard
- In a medium saucepan, whisk together sugar, cornstarch, and salt.
- Gradually whisk in the milk until smooth.
- Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble (about 5–7 minutes).
- In a small bowl, lightly beat the eggs. Slowly add a few spoonfuls of the hot milk mixture into the eggs to temper them, whisking constantly.
- Pour the tempered eggs back into the saucepan and cook for 1–2 more minutes, stirring continuously.
- Remove from heat and stir in vanilla extract. Let cool slightly, then fold in Greek yogurt until smooth.
Step 2: Layer the Pudding
- Arrange a layer of vanilla wafers at the bottom of your dish.
- Add a layer of sliced bananas over the wafers.
- Spread a layer of the prepared custard evenly on top.
- Repeat the layers (wafers, bananas, custard) until all ingredients are used, finishing with custard on top.
Step 3: Chill
- Cover the dish with plastic wrap.
- Refrigerate for at least 2 hours to allow the flavors to meld and the wafers to soften.
Step 4: Garnish and Serve
- Top with whipped topping or freshly whipped cream before serving.
- Add extra banana slices or crushed vanilla wafers for garnish if desired.
- Serve chilled and enjoy your creamy Banana Pudding!
TIPS:
- Use ripe but firm bananas for the best texture and sweetness.
- For a lighter version, substitute part of the sugar with a natural sweetener.
- To prevent bananas from browning, lightly brush slices with lemon juice before layering.
