INGREDIENTS:

  • 3 ripe bananas, sliced
  • 2 cups low-fat milk
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 cup Greek yogurt (for added creaminess and protein)
  • 30 vanilla wafers
  • 1/2 cup whipped topping or freshly whipped cream

INSTRUCTIONS

Step 1: Prepare the Vanilla Custard

  1. In a medium saucepan, whisk together sugar, cornstarch, and salt.
  2. Gradually whisk in the milk until smooth.
  3. Cook over medium heat, stirring constantly, until the mixture thickens and begins to bubble (about 5–7 minutes).
  4. In a small bowl, lightly beat the eggs. Slowly add a few spoonfuls of the hot milk mixture into the eggs to temper them, whisking constantly.
  5. Pour the tempered eggs back into the saucepan and cook for 1–2 more minutes, stirring continuously.
  6. Remove from heat and stir in vanilla extract. Let cool slightly, then fold in Greek yogurt until smooth.

Step 2: Layer the Pudding

  1. Arrange a layer of vanilla wafers at the bottom of your dish.
  2. Add a layer of sliced bananas over the wafers.
  3. Spread a layer of the prepared custard evenly on top.
  4. Repeat the layers (wafers, bananas, custard) until all ingredients are used, finishing with custard on top.

Step 3: Chill

  1. Cover the dish with plastic wrap.
  2. Refrigerate for at least 2 hours to allow the flavors to meld and the wafers to soften.

Step 4: Garnish and Serve

  1. Top with whipped topping or freshly whipped cream before serving.
  2. Add extra banana slices or crushed vanilla wafers for garnish if desired.
