INSTRUCTIONS
Step 1: Prepare the Chicken
- Place the chicken breasts between two pieces of plastic wrap.
- Using a meat mallet or rolling pin, pound them to an even thickness (about 1/2 inch).
- Pat dry with paper towels to help the coating stick.
Step 2: Set Up the Breading Station
- In one bowl, combine 1 cup flour, paprika, garlic powder, onion powder, thyme, salt, and pepper.
- In a second bowl, whisk together the eggs and buttermilk.
- Dredge each chicken breast in the flour mixture, dip into the egg mixture, then return to the flour mixture for a second coating.
- Press gently to ensure an even, well-adhered crust.
Step 3: Cook the Chicken
- Heat oil in a large skillet over medium heat.
- Once hot, carefully place the chicken in the skillet.
- Cook for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
- Transfer cooked chicken to a plate lined with paper towels and keep warm.
Step 4: Make the Creamy Gravy
- Reduce heat to medium-low, leaving about 1-2 tablespoons of oil in the skillet.
- Whisk in 2 tablespoons flour and cook for 1 minute, stirring constantly to form a roux.
- Gradually whisk in the milk, ensuring there are no lumps.
- Simmer for 3-5 minutes until the gravy thickens.
- Season with salt and black pepper to taste.
Step 5: Serve
- Place each piece of chicken on a serving plate.
- Spoon warm gravy generously over the top.
- Garnish with chopped parsley if desired.
- Serve immediately with steamed vegetables or mashed cauliflower for a balanced meal.
TIPS:
- For extra crispiness, let the breaded chicken rest for 10 minutes before frying.
- You can bake the chicken at 400°F (200°C) for 20-25 minutes as a lighter alternative.
- Serve with a side of sautéed greens or a fresh salad to add more nutrients to the meal.
