  • Mixing bowls (2-3)
  • Meat mallet or rolling pin
  • Tongs
  • Whisk
  • Measuring cups and spoons
  • Paper towels

INGREDIENTS:

  • 4 boneless, skinless chicken breasts
  • 1 cup whole wheat flour (or all-purpose flour)
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1/2 cup low-fat buttermilk
  • 3 tablespoons olive oil or avocado oil (for frying)
  • 2 tablespoons whole wheat flour (for gravy)
  • 1 1/2 cups low-fat milk
  • Salt and black pepper to taste (for gravy)
  • Fresh chopped parsley (optional, for garnish)

INSTRUCTIONS

Step 1: Prepare the Chicken

  1. Place the chicken breasts between two pieces of plastic wrap.
  2. Using a meat mallet or rolling pin, pound them to an even thickness (about 1/2 inch).
  3. Pat dry with paper towels to help the coating stick.

Step 2: Set Up the Breading Station

  1. In one bowl, combine 1 cup flour, paprika, garlic powder, onion powder, thyme, salt, and pepper.
  2. In a second bowl, whisk together the eggs and buttermilk.
  3. Dredge each chicken breast in the flour mixture, dip into the egg mixture, then return to the flour mixture for a second coating.
  4. Press gently to ensure an even, well-adhered crust.

Step 3: Cook the Chicken

  1. Heat oil in a large skillet over medium heat.
  2. Once hot, carefully place the chicken in the skillet.
  3. Cook for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F (74°C).
  4. Transfer cooked chicken to a plate lined with paper towels and keep warm.

Step 4: Make the Creamy Gravy

  1. Reduce heat to medium-low, leaving about 1-2 tablespoons of oil in the skillet.
  2. Whisk in 2 tablespoons flour and cook for 1 minute, stirring constantly to form a roux.
  3. Gradually whisk in the milk, ensuring there are no lumps.
  4. Simmer for 3-5 minutes until the gravy thickens.
  5. Season with salt and black pepper to taste.

Step 5: Serve

  1. Place each piece of chicken on a serving plate.
  2. Spoon warm gravy generously over the top.
  3. Garnish with chopped parsley if desired.
  4. Serve immediately with steamed vegetables or mashed cauliflower for a balanced meal.

TIPS:

  • For extra crispiness, let the breaded chicken rest for 10 minutes before frying.
  • You can bake the chicken at 400°F (200°C) for 20-25 minutes as a lighter alternative.
  • Serve with a side of sautéed greens or a fresh salad to add more nutrients to the meal.
