  • 1 tablespoon Dijon mustard

  • 1 teaspoon freshly ground black pepper

INSTRUCTIONS

Step 1: Prepare the Roast

  1. Preheat your oven to 450°F (232°C).
  2. Place the prime rib on a cutting board. Using a sharp knife, carefully butterfly the roast by slicing horizontally through the center, stopping before cutting all the way through. Open it like a book.
  3. Pat the inside dry with paper towels.

Step 2: Make the Garlic Herb Filling

  1. In a small mixing bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, Dijon mustard, salt, pepper, and smoked paprika.
  2. Mix well until a thick herb paste forms.
  3. Spread the herb mixture evenly over the inside of the butterflied roast.

Step 3: Roll and Tie the Roast

  1. Carefully roll the roast back into its original shape, enclosing the herb filling inside.
