CUISINE: American
SERVINGS: 8 servings
EQUIPMENT:
- Roasting pan with rack
- Sharp chef’s knife
- Cutting board
- Small mixing bowl
- Kitchen twine
- Meat thermometer
- Aluminum foil
INGREDIENTS:
- 1 (4–5 pound) boneless prime rib roast
- 3 tablespoons olive oil
- 6 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme leaves
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon sea salt
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon smoked paprika (optional)
INSTRUCTIONS
Step 1: Prepare the Roast
- Preheat your oven to 450°F (232°C).
- Place the prime rib on a cutting board. Using a sharp knife, carefully butterfly the roast by slicing horizontally through the center, stopping before cutting all the way through. Open it like a book.
- Pat the inside dry with paper towels.
Step 2: Make the Garlic Herb Filling
- In a small mixing bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, Dijon mustard, salt, pepper, and smoked paprika.
- Mix well until a thick herb paste forms.
- Spread the herb mixture evenly over the inside of the butterflied roast.
Step 3: Roll and Tie the Roast
- Carefully roll the roast back into its original shape, enclosing the herb filling inside.
- Secure the roast tightly with kitchen twine at 1–2 inch intervals.
- Place the tied roast on a rack inside the roasting pan.
Step 4: Roast to Perfection
- Roast at 450°F for 15 minutes to create a flavorful crust.
- Reduce the oven temperature to 325°F (163°C) and continue roasting for approximately 1 hour 15–30 minutes, or until the internal temperature reaches 130°F for medium-rare.
- Remove from the oven and tent loosely with aluminum foil. Let rest for 15–20 minutes before slicing to allow juices to redistribute.
Step 5: Slice and Serve
- Remove the kitchen twine and slice the roast into thick portions.
- Serve warm with your favorite roasted vegetables or a fresh green salad.
- Enjoy your beautifully seasoned Garlic Herb Stuffed Prime Rib!
TIPS:
- Use a meat thermometer for accurate doneness and perfectly cooked beef.
- For added nutrition and balance, serve with fiber-rich sides like roasted Brussels sprouts or quinoa salad.
- Allowing the roast to rest before slicing ensures maximum juiciness and tenderness.
