  • 1 tablespoon Dijon mustard

INSTRUCTIONS

Step 1: Prepare the Roast

  1. Preheat your oven to 450°F (232°C).
  2. Place the prime rib on a cutting board. Using a sharp knife, carefully butterfly the roast by slicing horizontally through the center, stopping about 1 inch before cutting all the way through. Open it like a book.
  3. Pat the meat dry with paper towels for better seasoning adherence.

Step 2: Make the Garlic Herb Filling

  1. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, Dijon mustard, salt, pepper, and smoked paprika.
  2. Mix well to form a fragrant herb paste.
  3. Spread the mixture evenly over the inside surface of the butterflied roast.

Step 3: Roll and Secure

  1. Carefully roll the roast back into its original shape.
  2. Tie it securely with kitchen twine at 1½-inch intervals to hold the stuffing in place.
  3. Rub any remaining herb mixture over the outside of the roast.

Step 4: Roast to Perfection

  1. Place the roast on a rack in a roasting pan, fat side up.
  2. Roast at 450°F for 15 minutes to develop a flavorful crust.
  3. Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour 15 minutes, or until a meat thermometer reads 130°F–135°F for medium-rare.
  4. Remove the roast from the oven and tent loosely with aluminum foil. Let it rest for 15–20 minutes to allow the juices to redistribute.

  1. Carefully remove the kitchen twine.
