COOK TIME: 1 hour 30 minutes
COURSE: Main Course
CUISINE: American
SERVINGS: 8 servings
EQUIPMENT:
- Roasting pan with rack
- Sharp chef’s knife
- Cutting board
- Kitchen twine
- Small mixing bowl
- Meat thermometer
- Aluminum foil
INGREDIENTS:
- 1 (4-5 pound) boneless prime rib roast
- 3 tablespoons olive oil
- 6 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 2 tablespoons fresh thyme leaves
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon Dijon mustard
- 1 teaspoon sea salt (or to taste)
- 1 teaspoon freshly ground black pepper
- 1 teaspoon smoked paprika (optional)
INSTRUCTIONS
Step 1: Prepare the Roast
- Preheat your oven to 450°F (232°C).
- Place the prime rib on a cutting board. Using a sharp knife, carefully butterfly the roast by slicing horizontally through the center, stopping about 1 inch before cutting all the way through. Open it like a book.
- Pat the meat dry with paper towels for better seasoning adherence.
Step 2: Make the Garlic Herb Filling
- In a small bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, Dijon mustard, salt, pepper, and smoked paprika.
- Mix well to form a fragrant herb paste.
- Spread the mixture evenly over the inside surface of the butterflied roast.
Step 3: Roll and Secure
- Carefully roll the roast back into its original shape.
- Tie it securely with kitchen twine at 1½-inch intervals to hold the stuffing in place.
- Rub any remaining herb mixture over the outside of the roast.
Step 4: Roast to Perfection
- Place the roast on a rack in a roasting pan, fat side up.
- Roast at 450°F for 15 minutes to develop a flavorful crust.
- Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour 15 minutes, or until a meat thermometer reads 130°F–135°F for medium-rare.
- Remove the roast from the oven and tent loosely with aluminum foil. Let it rest for 15–20 minutes to allow the juices to redistribute.
Step 5: Slice and Serve
- Carefully remove the kitchen twine.
- Slice the roast into thick portions.
- Serve warm with your favorite roasted vegetables or a fresh green salad.
TIPS:
- For the most accurate doneness, use a reliable meat thermometer.
- Let the roast come to room temperature for about 30 minutes before roasting for more even cooking.
- Pair with horseradish sauce or au jus for added flavor.
