INGREDIENTS:
- 4 boneless, skinless chicken breasts
- 4 slices lean deli ham
- 4 slices Swiss cheese
- 1 tablespoon olive oil

- 1 teaspoon paprika

- Salt and black pepper to taste
- 1 tablespoon Dijon mustard (optional, for added flavor)

INSTRUCTIONS
Step 1: Prepare the Chicken
- Preheat your grill to medium heat (about 375–400°F).
- Place each chicken breast on a cutting board and carefully slice a horizontal pocket into the side, being careful not to cut all the way through.
- If needed, gently pound the chicken to an even thickness using a meat mallet.
- Season both the inside and outside of the chicken with garlic powder, paprika, thyme, salt, and pepper.
Step 2: Stuff the Chicken
- Spread a thin layer of Dijon mustard inside each chicken pocket if using.
- Fold a slice of ham and a slice of Swiss cheese to fit inside each pocket.
- Secure the opening with toothpicks or tie with kitchen twine to keep the filling in place.
- Lightly brush the outside of the chicken with olive oil.
Step 3: Grill the Chicken
- Place the stuffed chicken breasts onto the preheated grill.
- Grill for 6–8 minutes per side, closing the lid between flips, until the internal temperature reaches 165°F.
- If flare-ups occur, move the chicken to indirect heat to prevent burning.
Step 4: Rest and Serve
- Remove the chicken from the grill and let it rest for 5 minutes.
- Carefully remove toothpicks or twine.
- Garnish with freshly chopped parsley and serve hot.
