PREP TIME: 15 minutes
COOK TIME: 20 minutes
COURSE: Main Course
CUISINE: French-American
SERVINGS: 4 servings

EQUIPMENT:

  • Grill or grill pan
  • Sharp knife
  • Cutting board
  • Meat mallet (optional)
  • Toothpicks or kitchen twine
  • Tongs
  • Instant-read thermometer

INGREDIENTS:

  • 4 boneless, skinless chicken breasts
  • 4 slices lean deli ham
  • 4 slices Swiss cheese
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 tablespoon Dijon mustard (optional, for added flavor)
  • Fresh parsley, chopped (for garnish)

INSTRUCTIONS

Step 1: Prepare the Chicken

  1. Preheat your grill to medium heat (about 375–400°F).
  2. Place each chicken breast on a cutting board and carefully slice a horizontal pocket into the side, being careful not to cut all the way through.
  3. If needed, gently pound the chicken to an even thickness using a meat mallet.
  4. Season both the inside and outside of the chicken with garlic powder, paprika, thyme, salt, and pepper.

Step 2: Stuff the Chicken

  1. Spread a thin layer of Dijon mustard inside each chicken pocket if using.
  2. Fold a slice of ham and a slice of Swiss cheese to fit inside each pocket.
  3. Secure the opening with toothpicks or tie with kitchen twine to keep the filling in place.
  4. Lightly brush the outside of the chicken with olive oil.

Step 3: Grill the Chicken

  1. Place the stuffed chicken breasts onto the preheated grill.
  2. Grill for 6–8 minutes per side, closing the lid between flips, until the internal temperature reaches 165°F.
  3. If flare-ups occur, move the chicken to indirect heat to prevent burning.

Step 4: Rest and Serve

  1. Remove the chicken from the grill and let it rest for 5 minutes.
  2. Carefully remove toothpicks or twine.
  3. Garnish with freshly chopped parsley and serve hot.

TIPS:

  • For added crunch without frying, sprinkle the outside with whole-grain mustard and a light dusting of whole-wheat breadcrumbs before grilling.
  • Pair with steamed vegetables, roasted asparagus, or a light green salad for a balanced meal.
  • Ensure the chicken is fully sealed to prevent cheese from leaking out during grilling.
