For the Biscuits:

  • 6 tablespoons cold unsalted butter, cubed
  • 3/4 cup buttermilk (or milk with 1 teaspoon lemon juice)

For the Sausage Gravy:

  • 12 ounces lean breakfast sausage (pork or turkey)
  • 2 tablespoons whole wheat or all-purpose flour
  • 2 cups low-fat milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste

INSTRUCTIONS

Step 1: Prepare the Biscuits

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. Add the cold cubed butter. Use a pastry cutter or fork to cut the butter into the flour until the mixture resembles coarse crumbs.
  4. Pour in the buttermilk and gently mix until just combined. Do not overmix.
  5. Turn the dough onto a lightly floured surface, gently pat to about 1-inch thickness, and cut into biscuits.
  6. Place biscuits on the prepared baking sheet and bake for 12–15 minutes, or until golden brown. Set aside.

Step 2: Cook the Sausage

  1. While the biscuits bake, heat a large skillet over medium heat.
  2. Add the sausage and cook, breaking it up with a spoon, until browned and fully cooked.
  3. If necessary, drain excess grease but leave about 1 tablespoon in the pan for flavor.

Step 3: Make the Gravy

  1. Sprinkle flour over the cooked sausage and stir well to coat. Cook for 1–2 minutes.
  2. Gradually whisk in the milk, stirring constantly to prevent lumps.
  3. Bring the mixture to a gentle simmer and cook for 5–7 minutes, stirring frequently, until thickened.
  4. Season with garlic powder, black pepper, and salt to taste.

Step 4: Assemble and Serve

  1. Split the warm biscuits in half.
  2. Spoon generous amounts of sausage gravy over each biscuit.
  3. Serve immediately while hot and enjoy!

TIPS:

  • For a lighter version, use turkey sausage and low-fat milk.
  • A pinch of crushed red pepper adds a subtle heat to the gravy.
  • Leftover gravy can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
