Homemade Smash Burgers

- Mixing bowl

INGREDIENTS:
- 1 1/2 pounds ground beef (80/20 blend preferred)
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 burger buns
- 4 slices cheddar cheese
- 1 tablespoon butter (for toasting buns)
- 1/2 cup sliced pickles
- 1/4 cup thinly sliced red onion
- 1/2 cup shredded lettuce
- 1 large tomato, sliced
- 1/4 cup burger sauce (or ketchup and mustard)
INSTRUCTIONS
Step 1: Prepare the Beef
- Divide the ground beef into 8 equal portions (about 3 ounces each).
- Gently roll into loose balls without overworking the meat.
- Season lightly with salt and pepper.
Step 2: Toast the Buns
- Heat the skillet over medium heat and add butter.
- Place buns cut-side down and toast until golden brown.
- Remove and set aside.
Step 3: Smash the Burgers
- Increase heat to medium-high until the skillet is very hot.
- Place beef balls onto the skillet, leaving space between each.
- Place a piece of parchment paper over each ball and firmly press down with a spatula to create a thin patty.
- Cook for 2-3 minutes until edges are crispy and browned.
- Flip the patties and immediately top with a slice of cheese.
- Cook for another 1-2 minutes until cheese melts and burgers are cooked through.
Step 4: Assemble and Serve
- Spread burger sauce on the bottom bun.
- Add two smash patties per bun for a double stack.
- Top with pickles, red onion, lettuce, and tomato.
- Cover with the top bun and serve immediately.
TIPS:
- Use high heat to create a flavorful crust without overcooking the inside.
- Do not press down on the patties after flipping to keep them juicy.
- For a healthier twist, serve in lettuce wraps or whole-grain buns.
