INGREDIENTS:
- 1 (8–10 pound) smoked spiral-cut ham
- 1 cup pomegranate juice (100% juice)
- 1/2 cup pomegranate molasses
- 1/3 cup honey
- 2 fresh jalapeños, thinly sliced (seeds removed for less heat)
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon sea salt (optional)
- 1/4 cup fresh pomegranate arils (for garnish)
INSTRUCTIONS
Step 1: Prepare the Smoker and Ham
- Preheat your smoker to 250°F using applewood or hickory chips for mild, complementary smoke flavor.
- Remove the ham from packaging and place it cut-side down in an aluminum roasting pan.
- Score the surface lightly if not pre-sliced, allowing the glaze to penetrate more deeply.
Step 2: Prepare the Jalapeño Pomegranate Glaze
- In a small saucepan over medium heat, combine pomegranate juice, pomegranate molasses, honey, Dijon mustard, and apple cider vinegar.
- Add sliced jalapeños, black pepper, smoked paprika, and salt.
- Simmer for 8–10 minutes, stirring occasionally, until slightly thickened.
- Remove from heat and let cool slightly. Reserve 1/4 cup for serving.
Step 3: Smoke and Glaze the Ham
- Place the ham (in the roasting pan) into the smoker.
- Brush a generous layer of glaze over the ham.
- Cover loosely with foil and smoke for about 1 1/2 to 2 hours, or until the internal temperature reaches 140°F.
- Every 30 minutes, baste with additional glaze to build flavor and maintain moisture.
- During the last 20 minutes, remove the foil to allow the glaze to caramelize slightly.
Step 4: Rest, Garnish, and Serve
- Remove the ham from the smoker and let it rest for 10–15 minutes.
- Brush lightly with reserved glaze for extra shine.
- Sprinkle fresh pomegranate arils over the top for color and brightness.
- Slice along the natural spiral cuts and serve warm.
