- 8 large eggs

- 1/2 cup shredded mozzarella cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced red onion
- 1/2 cup sliced mushrooms (optional)

INSTRUCTIONS
Step 1: Preheat the Smoker
- Preheat your smoker to 350°F.
- Lightly grease a 9×13-inch cast iron skillet or aluminum pan.
Step 2: Cook the Meat
- In a skillet over medium heat, cook the breakfast sausage (or bacon) until fully browned.
- Drain any excess grease and set aside.
Step 3: Prepare the Egg Mixture
- In a large mixing bowl, whisk together the eggs and milk until smooth.
- Add garlic powder, smoked paprika, salt, and pepper.
- Stir in diced bell peppers, red onion, mushrooms (if using), cooked sausage, hash browns, and half of the shredded cheese.
Step 4: Assemble the Casserole
- Pour the mixture evenly into the prepared pan.
- Top with the remaining shredded cheddar and mozzarella.
Step 5: Smoke the Casserole
- Place the pan in the smoker and cook for 50–60 minutes.
