  • 4 beef ribeye or sirloin steaks (about 1 inch thick)

  • 1/4 cup Greek yogurt or mayonnaise
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon paprika
  • 2 tablespoons chopped fresh parsley (optional)

INSTRUCTIONS

Step 1: Prepare the Steaks

  1. Remove the steaks from the refrigerator 20–30 minutes before cooking to bring them to room temperature.
  2. Pat the steaks dry with paper towels and brush both sides lightly with olive oil.
  3. Season generously with salt and freshly ground black pepper.

Step 2: Sear the Steaks

  1. Heat a cast-iron skillet over medium-high heat until very hot.
  2. Add the steaks and sear for 3–4 minutes per side for medium-rare, or cook to your preferred doneness.
  3. Use a meat thermometer if desired (130°F for medium-rare, 140°F for medium).
  4. Once cooked, keep the steaks in the oven-safe skillet and remove from direct heat.

Step 3: Prepare the Parmesan Crust

  1. In a mixing bowl, combine grated Parmesan cheese, Greek yogurt (or mayonnaise), minced garlic, Italian seasoning, paprika, and chopped parsley.
  2. Stir until a thick, spreadable mixture forms.

Step 4: Broil to Golden Perfection

  1. Preheat your oven broiler on high.
  2. Spoon the Parmesan mixture evenly over the top of each steak.
  3. Place the skillet under the broiler for 2–4 minutes, or until the cheese topping is melted and golden brown.
  4. Remove carefully and let the steaks rest for 5 minutes before serving.
