- 2 cloves garlic, minced

INSTRUCTIONS
Step 1: Prepare the Steaks
- Remove the steaks from the refrigerator 20–30 minutes before cooking to bring them to room temperature.
- Pat the steaks dry with paper towels and brush both sides lightly with olive oil.
- Season generously with salt and freshly ground black pepper.
Step 2: Sear the Steaks
- Heat a cast-iron skillet over medium-high heat until very hot.
- Add the steaks and sear for 3–4 minutes per side for medium-rare, or cook to your preferred doneness.
- Use a meat thermometer if desired (130°F for medium-rare, 140°F for medium).
- Once cooked, keep the steaks in the oven-safe skillet and remove from direct heat.
Step 3: Prepare the Parmesan Crust
- In a mixing bowl, combine grated Parmesan cheese, Greek yogurt (or mayonnaise), minced garlic, Italian seasoning, paprika, and chopped parsley.
- Stir until a thick, spreadable mixture forms.
Step 4: Broil to Golden Perfection
- Preheat your oven broiler on high.
- Spoon the Parmesan mixture evenly over the top of each steak.
- Place the skillet under the broiler for 2–4 minutes, or until the cheese topping is melted and golden brown.
