  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 teaspoon onion powder

INSTRUCTIONS

Step 1: Prepare the Roast

  1. Remove the prime rib roast from the refrigerator at least 1 hour before roasting to bring it to room temperature.
  2. Preheat your oven to 450°F (232°C).
  3. Pat the roast dry with paper towels and place it on a rack in a roasting pan, fat side up.

Step 2: Season the Meat

  1. In a small bowl, combine olive oil, minced garlic, rosemary, thyme, salt, black pepper, and onion powder.
  2. Rub the seasoning mixture evenly over the entire surface of the roast.
  3. Ensure the roast is well coated for maximum flavor.

Step 3: Roast to Perfection

  1. Place the roast in the preheated oven and cook at 450°F for 15 minutes to create a flavorful crust.
  2. Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1 hour 30 minutes, or until the internal temperature reaches 125°F for medium-rare.
  3. Use a meat thermometer inserted into the thickest part of the roast for accurate results.

Step 4: Rest and Serve

  1. Remove the roast from the oven and tent loosely with aluminum foil.
  2. Allow it to rest for 20-30 minutes to let the juices redistribute.
  3. Carve into slices using a sharp knife and serve warm.

  • For medium doneness, cook until the internal temperature reaches 135°F.
  • Letting the meat rest is essential for juicy slices—do not skip this step.
