- 3 pounds pork shoulder (trimmed of excess fat)
- 1 tablespoon olive oil
- 1 tablespoon paprika
- 2 teaspoons garlic powder

- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon chili powder (optional)
- 1 cup low-sodium chicken broth
- 1/2 cup apple cider vinegar
- 1/2 cup natural barbecue sauce (no added sugar preferred)
INSTRUCTIONS
Step 1: Prepare the Pork
- Pat the pork shoulder dry with paper towels.
- In a small bowl, combine paprika, garlic powder, onion powder, cumin, smoked paprika, salt, pepper, and chili powder.
- Rub the spice mixture evenly over the entire pork shoulder.
Step 2: Sear the Meat
- Heat olive oil in a large skillet over medium-high heat.
- Sear the pork on all sides for 2-3 minutes per side until browned. This helps lock in flavor.
- Transfer the pork to the slow cooker or Dutch oven.
Step 3: Slow Cook
- Pour chicken broth and apple cider vinegar around (not over) the pork.
- Cover and cook on low for 6-8 hours (or 3-4 hours on high) until the pork is fork-tender.
- If using a Dutch oven, cook covered at 300°F (150°C) for about 3-4 hours.
Step 4: Shred and Finish
- Remove the pork from the cooker and place it on a cutting board.
- Use two forks to shred the meat into bite-sized pieces.
- Return the shredded pork to the cooker and stir in the barbecue sauce.
- Let it cook for an additional 15-20 minutes to absorb the flavors.
