  • 2 tablespoons honey or brown sugar
  • 2 cloves garlic, smashed
  • 1 teaspoon whole black peppercorns
  • 2 sprigs fresh rosemary or thyme (optional)
  • 2–4 pounds chicken (breasts, thighs, drumsticks, or whole chicken)

INSTRUCTIONS

Step 1: Prepare the Brine

  1. In a large mixing bowl or pot, combine the warm water and kosher salt.
  2. Whisk until the salt is completely dissolved.
  3. Add honey (or brown sugar), garlic, peppercorns, and fresh herbs. Stir well to combine.

Step 2: Add the Chicken

  1. Place the chicken into a large resealable bag or container.
  2. Pour the brine over the chicken, ensuring it is fully submerged.
  3. If needed, add additional cold water to cover the chicken completely.

Step 3: Refrigerate

  1. Seal the bag or cover the container.
  2. Refrigerate for at least 30 minutes for smaller cuts or up to 12 hours for a whole chicken.
  3. Do not exceed 24 hours, as the chicken may become too salty.

Step 4: Rinse and Cook

  1. Remove the chicken from the brine and discard the liquid.
  2. Rinse the chicken under cold water and pat dry with paper towels.
  3. Cook according to your preferred method—grill, bake, roast, or pan-sear—until the internal temperature reaches 165°F (74°C).
