INGREDIENTS:

  • 2 pounds chicken wings (split, tips removed)
  • 1 tablespoon olive oil
  • 1 tablespoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon kosher salt
  • 1/2 teaspoon cayenne pepper (optional)
  • 1/2 cup your favorite BBQ sauce (optional for glazing)
  • Fresh parsley for garnish (optional)

INSTRUCTIONS

Step 1: Prepare the Wings

  1. Pat the chicken wings dry with paper towels to help achieve crispy skin.
  2. In a large bowl, toss the wings with olive oil.
  3. Combine smoked paprika, garlic powder, onion powder, black pepper, salt, and cayenne pepper.
  4. Sprinkle the seasoning mixture over the wings and toss until evenly coated.

Step 2: Smoke the Wings

  1. Preheat your smoker to 225°F (107°C). Add your preferred wood chips for flavor.
  2. Place the wings on the smoker rack in a single layer.
  3. Smoke for 45–60 minutes, or until the internal temperature reaches about 165°F (74°C).
  4. Remove the wings from the smoker and set aside.

Step 3: Grill for Crispy Finish

  1. Preheat your grill to medium-high heat (about 375–400°F).
  2. Place the smoked wings directly on the grill grates.
  3. Grill for 10–15 minutes, turning frequently, until the skin is crispy and the internal temperature reaches 175–185°F for tender wings.
  4. If using BBQ sauce, brush it on during the last 3–5 minutes of grilling.

Step 4: Garnish and Serve

  1. Remove the wings from the grill and let them rest for 5 minutes.
  2. Transfer to a serving platter.
  3. Garnish with fresh parsley if desired and serve hot.
