INGREDIENTS:

- 2 tablespoons whole wheat flour
- 3 cups low-fat milk (warmed)

- 2 cups shredded sharp cheddar cheese
- 1 cup shredded smoked gouda cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper to taste
- 1/2 cup whole wheat breadcrumbs (optional, for topping)
- 1 tablespoon olive oil (if using breadcrumbs)
INSTRUCTIONS
Step 1: Prepare the Pasta
- Bring a large pot of salted water to a boil.
- Add the macaroni and cook until just al dente, about 1–2 minutes less than package directions.
- Drain using a colander and set aside.
Step 2: Make the Cheese Sauce
- In a medium saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for 1-2 minutes to form a roux, stirring constantly.
- Gradually whisk in the warmed milk, stirring until smooth and thickened (about 3-5 minutes).
- Reduce heat to low and stir in Greek yogurt, cheddar, smoked gouda, and mozzarella cheeses.
- Add smoked paprika, garlic powder, onion powder, salt, and pepper. Stir until fully melted and creamy.
Step 3: Assemble the Mac and Cheese
- Preheat your smoker or grill to 225°F.
- Fold the cooked pasta into the cheese sauce until evenly coated.
- Transfer the mixture into a cast iron skillet or aluminum pan.
- If using breadcrumbs, mix them with olive oil and sprinkle evenly over the top.
Step 4: Smoke to Perfection
- Place the pan in the smoker and close the lid.
- Smoke for 45 minutes to 1 hour, allowing the flavors to develop and the top to lightly golden.
- Remove carefully and let rest for 5 minutes before serving.
