INSTRUCTIONS

Step 1: Prepare and Smoke the Potatoes

  1. Preheat your smoker or grill to 225°F (107°C). Use mild wood chips such as apple, cherry, or hickory for balanced smoke flavor.
  2. Toss the peeled and cubed potatoes with olive oil and spread them evenly in a foil tray or wrap loosely in aluminum foil.
  3. Place the potatoes in the smoker and smoke for 45–60 minutes, or until fork-tender and infused with smoky aroma.

Step 2: Boil Until Tender (If Needed)

  1. If the potatoes are not fully tender after smoking, transfer them to a large pot.
  2. Cover with water and bring to a boil. Cook for 10–15 minutes until completely soft.
