INSTRUCTIONS
Step 1: Prepare and Smoke the Potatoes
- Preheat your smoker or grill to 225°F (107°C). Use mild wood chips such as apple, cherry, or hickory for balanced smoke flavor.
- Toss the peeled and cubed potatoes with olive oil and spread them evenly in a foil tray or wrap loosely in aluminum foil.
- Place the potatoes in the smoker and smoke for 45–60 minutes, or until fork-tender and infused with smoky aroma.
Step 2: Boil Until Tender (If Needed)
- If the potatoes are not fully tender after smoking, transfer them to a large pot.
- Cover with water and bring to a boil. Cook for 10–15 minutes until completely soft.
- Drain thoroughly using a colander to remove excess moisture.
Step 3: Mash and Flavor
- Return the hot potatoes to a large mixing bowl.
- Add butter, warm milk, sour cream (or Greek yogurt), minced garlic, salt, pepper, and smoked paprika.
- Mash until smooth and creamy using a potato masher or hand mixer. Adjust milk for desired consistency.
