  • 1 teaspoon ground cinnamon
  • 1 tablespoon cornstarch or arrowroot powder
  • 1 cup whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk (or milk of choice)
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 tablespoon maple syrup

INSTRUCTIONS

Step 1: Preheat the Smoker

  1. Preheat your smoker to 350°F.
  2. Use mild fruitwood like apple or cherry for a subtle smoky flavor.

Step 2: Prepare the Peach Filling

  1. In a large mixing bowl, combine the sliced peaches, coconut sugar, lemon juice, vanilla extract, cinnamon, and cornstarch.
  2. Toss until the peaches are evenly coated.
  3. Transfer the peach mixture to a cast iron skillet or grill-safe baking dish, spreading evenly.

Step 3: Make the Cobbler Topping

  1. In a separate bowl, whisk together whole wheat pastry flour, baking powder, and salt.
  2. Add almond milk, melted coconut oil (or butter), and maple syrup.
  3. Stir until just combined, being careful not to overmix.
