INGREDIENTS:

  • 1 pound Velveeta cheese, cubed
  • 1 cup shredded pepper jack cheese
  • 1/2 pound ground beef or chorizo, cooked and drained
  • 1 can (10 ounces) diced tomatoes with green chilies, undrained
  • 1/2 cup diced white onion
  • 1/4 cup diced jalapeños (fresh or pickled)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

INSTRUCTIONS

Step 1: Prepare the Smoker

  1. Preheat your smoker to 250°F.
  2. Add your preferred wood chips or pellets to create a steady smoke.

Step 2: Assemble the Queso

  1. In a cast iron skillet or aluminum pan, combine the cubed Velveeta and shredded pepper jack cheese.
  2. Add the cooked ground beef or chorizo, diced tomatoes with green chilies (including the liquid), onion, and jalapeños.
  3. Sprinkle in garlic powder, smoked paprika, salt, and pepper.
  4. Stir gently to evenly distribute the ingredients.

Step 3: Smoke the Queso

  1. Place the skillet in the smoker and close the lid.
  2. Smoke for 45-60 minutes, stirring every 15-20 minutes to ensure even melting.
  3. Continue cooking until the cheese is fully melted and the dip is smooth and creamy.

Step 4: Garnish and Serve

  1. Carefully remove the queso from the smoker.
  2. Stir well and garnish with freshly chopped cilantro if desired.
  3. Serve warm with tortilla chips, sliced vegetables, or warm tortillas.
