INGREDIENTS:

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • Zest and juice of 1 orange
  • Zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley or cilantro, chopped (for garnish)

INSTRUCTIONS

Step 1: Prepare the Marinade

  1. In a large mixing bowl, combine olive oil, orange zest, lemon zest, orange juice, and lemon juice.
  2. Add minced garlic, cumin, smoked paprika, coriander, turmeric, red pepper flakes, salt, and pepper.
  3. Whisk until well combined.

Step 2: Marinate the Chicken

  1. Add the chicken breasts to the bowl and coat them thoroughly with the marinade.
  2. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor).

Step 3: Cook the Chicken

  1. Heat a large skillet or grill pan over medium heat.
  2. Remove the chicken from the marinade, allowing excess to drip off.
  3. Cook for 6–7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken is golden and cooked through.
  4. Let the chicken rest for 5 minutes before slicing to retain juices.

Step 4: Garnish and Serve

  1. Transfer the chicken to serving plates.
  2. Spoon a little of the pan juices over the top for extra flavor.
  3. Garnish with freshly chopped parsley or cilantro.
  4. Serve with steamed vegetables, quinoa, brown rice, or a crisp green salad.
