INGREDIENTS:
- 1 tablespoon olive oil
- 1 pound lean ground turkey or lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet (1 ounce) low-sodium taco seasoning
- 1 teaspoon ground cumin
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn kernels, drained
- 1 can (14.5 ounces) diced tomatoes, with juice
- 1 can (10 ounces) diced tomatoes with green chilies
- 2 cups low-sodium chicken or vegetable broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
INSTRUCTIONS
Step 1: Cook the Protein
- Heat olive oil in a large soup pot or Dutch oven over medium heat.
- Add diced onion and sauté for 2-3 minutes until softened.
- Add ground turkey or beef and cook until browned, breaking it apart with a wooden spoon. Drain excess fat if needed.
- Stir in minced garlic, taco seasoning, and ground cumin. Cook for 1 minute until fragrant.
Step 2: Add the Remaining Ingredients
- Add black beans, kidney beans, corn, diced tomatoes, diced tomatoes with green chilies, and broth to the pot.
- Stir well to combine all ingredients evenly.
- Bring the soup to a gentle boil, then reduce heat to low.
- Simmer uncovered for 20 minutes, stirring occasionally to allow the flavors to blend.
- Season with salt and pepper to taste.
