INGREDIENTS:
- 1 tablespoon olive oil
- 1 pound lean ground beef or ground turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 packet taco seasoning (or 2 tablespoons homemade taco seasoning)
- 1 can (15 ounces) black beans, drained and rinsed
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) corn, drained
- 1 can (14.5 ounces) diced tomatoes
- 1 can (10 ounces) diced tomatoes with green chilies
- 2 cups low-sodium beef or chicken broth
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Optional toppings: shredded cheese, Greek yogurt or sour cream, sliced avocado, tortilla chips, lime wedges
INSTRUCTIONS
Step 1: Brown the Meat
- Heat olive oil in a large pot or Dutch oven over medium heat.
- Add the ground beef or turkey and cook until browned, breaking it apart with a spoon (about 5–7 minutes).
- Drain excess fat if necessary.
Step 2: Add Aromatics and Seasoning
- Add diced onion to the pot and sauté for 3–4 minutes until softened.
- Stir in minced garlic and cook for about 30 seconds until fragrant.
- Sprinkle in the taco seasoning and stir well to coat the meat and onions evenly.
Step 3: Add Beans, Vegetables, and Broth
- Add black beans, kidney beans, corn, diced tomatoes, and diced tomatoes with green chilies to the pot.
- Pour in the broth and stir everything together.
- Bring the soup to a gentle boil, then reduce heat and simmer for 15–20 minutes to allow the flavors to meld.
- Season with salt and pepper to taste.
Step 4: Serve and Garnish
- Ladle the hot taco soup into bowls.
- Top with chopped cilantro and your favorite toppings like shredded cheese, Greek yogurt, avocado slices, or crunchy tortilla chips.
- Serve immediately and enjoy!
