INSTRUCTIONS
Step 1: Cook the Bacon
- Heat a large skillet over medium heat.

- Using a slotted spoon, transfer bacon to a plate lined with paper towels, leaving about 2 tablespoons of bacon fat in the skillet.
Step 2: Caramelize the Onions
- Add the sliced onions to the skillet with the reserved bacon fat.
- Cook over medium-low heat, stirring occasionally, for 20–25 minutes until deeply caramelized and golden brown.
- Add minced garlic and cook for 1 additional minute until fragrant.
Step 3: Deglaze and Simmer
- Carefully add the whiskey to the skillet to deglaze, scraping up any browned bits from the bottom.
- Allow the whiskey to simmer for 2–3 minutes to cook off the alcohol.
- Stir in maple syrup, brown sugar, apple cider vinegar, black pepper, smoked paprika (if using), and the cooked bacon.
- Reduce heat to low and simmer for 10–15 minutes until thick and jam-like in consistency.
Step 4: Cool and Store
- Remove from heat and allow the jam to cool slightly; it will continue to thicken as it cools.
